There are many technologies for making puff pastry. For charlotte, a recipe is more suitable fast food(in this case, the finished products will turn out to be less crumbly, compared to other variations):

  1. Sift flour on the table, put butter crushed into pieces on top. Chop the whole mass with a large knife until large crumbs form.
  2. Pour sugar, salt into water and mix until dissolved.
  3. Pour the sweet-salty liquid into the butter crumbs and quickly knead the dough.
  4. Cover with moistened gauze or towel and refrigerate.
  5. After 2 hours, roll out the cooled mass thinly, fold it twice in the middle (4 layers are obtained), roll it out again and continue to repeat the process of rolling - folding 3 more times.

The dough can be made in advance: it is stored in the refrigerator for about 5 days, in a frozen state - for several months.

Now we are preparing the charlotte directly.

For her, in addition to the test (half a kilo), we take:

  • a couple of apples;
  • 50 g of sugar;
  • melted butter or milk (lubricate the surface);
  • powdered sugar;
  • raisins (3 tablespoons) add to the filling as desired.

How to cook:

  1. Divide the dough in half, roll out, lay out one layer in the prepared form. The form can also be lubricated with ordinary water, then the dough, having absorbed it into itself during the baking process, will become even more magnificent.
  2. We cut the apples into small cubes, mix them with sugar and raisins. To give a pleasant aroma, you can mix in a little ground cinnamon (a small spoon).
  3. We spread the filling on the dough in the form. So that during the cooking process the resulting liquid does not flow out, it is advisable to sprinkle flour (2 tablespoons) or starch (1 spoon) on top.
  4. Cut the second layer of dough into strips of the same width.
  5. Lay the strips on top of the filling, forming a “braid”, connect their ends with the edge of the bottom layer and pinch well.
  6. We coat the surface with milk or butter.
  7. We bake at 200 ° C for a quarter of an hour.
  8. We reduce the temperature in the oven to 160 ° and bake the product for another 10 minutes.

Sprinkle the cooled charlotte with powder and divide into portioned pieces.

How to cook in a slow cooker?

Delicate dessert with banana flavor can be prepared in a slow cooker.

To do this, on the packaging of puff pastry, take:

  • 2 apples and bananas;
  • 70 g nuts (walnuts);
  • sugar - about 50 g and a little more to sprinkle on top (you can take powder for this);
  • protein from one egg;
  • butter -50 g.

The cooking activity does not differ much from the traditional recipe:

  1. Prepare the dough: defrost and transfer to a floured table.
  2. We make the filling: chop apples, bananas and nuts with a knife into small cubes and mix with granulated sugar. It is better not to use a blender, as the result will be a mixture from which it will be difficult to isolate any individual taste and enjoy it.
  3. Roll out the dough into strips 7 cm wide.
  4. Put the filling in the center of the strip along the entire length, and then pinch the edges.
  5. We coat the bowl of the multicooker with oil (any), and then put the resulting sausage into it, folding it in a spiral.
  6. Sprinkle the surface with chopped butter (you can finely chop with a knife or grate).
  7. We bake in the “Baking” mode for about 2/3 hours.
  8. After the time has elapsed, turn the charlotte over, coat with protein, sprinkle with sugar and bake in the same mode for about half an hour.
  9. We first leave the finished charlotte for a quarter of an hour in a slow cooker, opening the lid, then transfer it to a plate.

After half an hour, you can cut into portions and serve.

From puff pastry without yeast

A wonderful pie with apples from puff pastry without yeast will turn out using a very small food set:

  • dough packaging;
  • a couple of apples;
  • 2 yolks;
  • sugar, ground cinnamon - to taste.

Dessert is prepared very quickly:

  1. Roll out the defrosted dough in a wide strip and spread it on a prepared sheet (oiled or lined with parchment).
  2. Peeled and peeled fruits are thinly cut and laid out in the center of the layer along the entire length.
  3. Sprinkle the top with the cinnamon sugar mixture.
  4. We cut the sides of the layer into identical horizontal stripes (before the filling).
  5. We wrap the strips on the filling, connecting them from above (left and right).
  6. We coat the surface with yolks.
  7. Bake at 180° for about half an hour.

Open apple pie

For a juicy dessert, you need to take:

  • puff pastry (one layer from the package);
  • sugar - 8 tablespoons;
  • apples - 4 pcs.;
  • egg (only protein is needed).

How to cook an open pie:

  1. Washed and peeled fruits cut into thin slices.
  2. Roll out the dough thinly.
  3. Put in a form, slightly pressing against the side walls, fixing the edges.
  4. Arrange the slices of apples nicely in a circle, sprinkle with sugar.
  5. Cut off the corners of the dough and bake.
  6. Beat the protein with sugar (50 g) until foam, the resulting mass pour over the filling.
  7. Sprinkle crumbs from the baked corners on top.
  8. Bake for half an hour at medium temperature.
  9. Leave in the form until cool.

Transfer the cooled dessert to a flat dish.

Simple and quick recipe

Very quickly, you can cook charlotte from the finished dough.

In addition to puff pastry, you will need:

  • 3 apples, peeled and cut into thin slices;
  • ½ cup sugar;
  • butter for greasing the mold (preferably butter);
  • yolk - for greasing the top of the pie.

Culinary activity in this case does not differ in special actions:

  1. Defrost the dough, divide into 2 unequal parts. We roll out both parts, we cover the bottom and walls of the mold smeared with oil.
  2. Lay out the apple slices in a row, sprinkle them with sugar.
  3. Cover with a smaller layer of dough, pinch the edges. Pierce with a fork in several places.
  4. We bake for about 25 minutes. at a temperature of about 200°C.

With the addition of pears

Delicious apple-pear dessert is prepared from:

  • packaging of dough (any puff);
  • fruits (2 apples, pears each);
  • sugar (150 g);
  • cognac (1 spoon);
  • 1 egg;
  • chopped almonds (50 g).

How to cook:

  1. Divide the dough in half, roll out both parts according to the size of the baking sheet.
  2. We cut the peeled fruits into thin slices, mix them in a separate bowl with cognac.
  3. Place one layer of dough on the prepared baking sheet.
  4. Arrange fruit slices on top, sprinkle them well with sugar, and then with chopped nuts.
  5. Cover with the second plate of dough, pinch the edges.
  6. From above we make small punctures with a skewer or fork and send it to the refrigerator for a third of an hour.
  7. Brush with beaten egg.
  8. Bake for half an hour at 220°C.

Apple Charlotte with Caramel

A sweet cake is obtained if caramelized fruits are used as a filling.

To prepare the filling take:

  • 3 sour apples;
  • 100 g of sugar;
  • 70 g butter;
  • a spoonful of ground cinnamon to give a unique flavor.

Preparing caramel filling is quite simple:

  1. Peeled apples cut into cubes.
  2. Melt the butter in a frying pan, add sugar and cook, stirring constantly, until it dissolves.
  3. Pour fruit cubes, cinnamon and cook over low heat for 2 minutes, and then turn off the heat.

It turns out a very sweet filling. That is why it is preferable to take sour varieties of apples. If there are none, then you can slightly oxidize the caramel itself by adding a little citric acid or juice.

When creating charlotte with caramel, it is better to divide the dough into 3 identical parts. Moreover, 2 parts are connected and used to form the bottom and side walls of the cake, and a third - for the top.

The surface of the product is smeared with beaten yolk and sprinkled with powder, and then baked for about 2/3 hours at an average temperature (185 °).

Cinnamon

To prepare a fragrant apple pie, we prepare:

  • packaging of puff pastry (yeast);
  • 5-6 apples;
  • 100 g of sugar;
  • 60 g flour;
  • a spoonful of lemon juice;
  • a spoonful of ground cinnamon;
  • a couple of pinches of nutmeg;
  • some salt.

Cooking cinnamon charlotte like this:

  1. Put the oven on heating (it should warm up to 220 ° C).
  2. Put a rolled out layer of dough on the bottom of the prepared form (it should cover not only the bottom, but also the sides).
  3. Cut the core from the washed apples, cut them into thin slices.
  4. Mix fruit pieces in a separate bowl with all the spices, then spread on a layer of dough.
  5. Cover the workpiece with the second half of the dough, pinch the joints. The top can be brushed with a beaten egg to ready pie turned ruddy.
  6. Send to preheated oven. After about a third of an hour, cover with a sheet of foil folded in three so that the top of the charlotte does not burn, and bake for another 20-25 minutes.

Before serving, the cake must be cooled for 1-1.5 hours.

Once the sugar has completely melted, leave the saucepan on the heat until the sugar turns amber. Reduce heat to low and carefully pour in the cream. Be careful, the caramel will bubble and splatter a lot! Bring the caramel to a boil, stirring the sugar cubes into the cream. Remove saucepan from heat, add salt and stir until smooth. Strain the sauce if desired.


Preheat the oven to 200 C. Lightly flour the work surface and roll out the dough a little. Cut out 4 circles with a diameter of 12 cm or make an apple mockup out of cardboard. Transfer the blanks to a baking sheet lined with baking paper.


Cut the apples in half, peel and remove the core. Cut into thin slices. Arrange the apples on the dough. Melt the butter and brush the apples with a brush. Sprinkle with sugar.


Place the baking sheet with the puffs in the oven and bake for 15-20 minutes until the apples are soft and the pastry is golden.

Pour 200 ml (1 cup) of water into a saucepan, bring to a boil. Add sugar. Gently drop apple slices into boiling water. Boil for no more than 2-3 minutes, then drain the water. Apples should become flexible.



Roll out the thawed dough into a thin layer, about 1-2 mm thick. Cut the layer into strips about 3 cm wide and 25-30 cm long.



Put 5 apple slices on a strip of dough. The slices should protrude one third from the top edge of the dough. Gently roll the strip with apples into a roll. Fold the bottom edges of the dough inwards.



Preheat the oven to 180-200 degrees. Put the finished roses on a baking sheet covered with baking paper. Place in preheated oven and bake puff roses with an apple for about 30 minutes.

And today's post will just be about one of my favorite desserts, I present to your attention a recipe for making puffs with apples from ready-made puff pastry.

I admit, sometimes I buy ready-made puffs with fruit filling, because they are so good for tea. But, having ready-made puff pastry in the freezer, puffs (in this case with apples) are faster to cook on your own than to go to the store for them.

And also puffs with apples from ready-made puff pastry - great recipe for beginners to master the wisdom of home baking, and together with children it will be fun to cook this dessert. Apples for making puffs from ready-made puff pastry are better to take sour varieties, they will create a brighter flavor composition in puffs.

Cooking time: 30 minutes

Servings - 9

Ingredients:

  • 500 g ready-made puff pastry
  • 3 large apples
  • 1 tbsp starch
  • 3 tbsp Sahara
  • 1 egg
  • a little flour for dusting the work surface
  • 1 tbsp powdered sugar

So, I have 500 g of ready-made puff pastry. You can take both yeast and yeast-free puff pastry, I have the second option. Most often, such puff pastry is sold in packs, where it has the form of layers of the same thickness and shape. And just my 500 g of dough is represented by three such layers.

And yes, do not forget to turn on the oven at the very beginning of the preparation of puff pastry apple puffs. The baking temperature is 180 degrees. By the time the baking sheet with the still raw puffs goes into the oven, it will already warm up.


From the three layers of ready-made puff pastry, I should get 9 puffs with apples, and each such puff will be a little smaller than a woman's palm. I cut each strip (layer) of dough across into three parts. There are 9 rectangles in total.


We roll out each rectangle of dough and thereby increase its area. The approximate thickness of the dough is now about 3 mm. Visually divide the rectangle into two parts, and then make cuts on one of the parts as in the photo.

Thus, I prepared all the blanks from the dough, after which I proceeded to prepare the apple filling for future puffs.


To prepare the filling, I took three sour apples, washed them and cut out the core. Then I cut the apples into small cubes and added three tablespoons of sugar and one tablespoon of cornstarch to them (you can also use potato starch). Thoroughly mix the filling so that the starch covers each piece of apple.

Why is there starch? As the apple puffs bake, the apples will release juice that will begin to flow out. But we want to get beautiful puffs with apples, so the starch will be mixed with apple juice during the baking process and the filling will not leak out due to the fact that it thickens slightly.


We divide the apple filling equally into 9 puffs.


We carefully fasten the edges of the puffs, otherwise during the baking process you risk getting not puffs with apples, but something else.


We spread puffs with apples from the finished puff pastry on a baking sheet sprinkled with flour. But that's not all, we need an egg. Lightly shake it with a fork and brush the surface of each puff with apples with an egg. Only after that we send the baking sheet with apple puffs to the oven preheated to 180 degrees and bake them for 25 minutes or until golden brown.


You will be surprised how the puffs begin to “grow” and “expand” during the baking process. It seems that I rolled out the puff pastry very thinly, but the finished puff pastry has great potential, it still took its toll and the puffs acquired a very appetizing lightness.

Apple pie is one of our family's favorites. Simple, always tasty, and budget-friendly, as a rule. Today we will cook puffs with apples, raisins and cinnamon from ready-made puff without yeast dough.

From the same dough, I prepare beautiful and tasty chamomile puffs with canned pineapple rings, the recipe for their preparation is even simpler and faster. With today's apple puffs, you will have to tinker a bit, but the result is worth it.

Ingredients: (for 8 puffs)

  • 1 package (500 g) yeast-free puff pastry
  • 650 g sweet and sour apples
  • 50 g raisins
  • 30 g butter
  • 3 art. l. sugar + 10 g vanilla sugar
  • 1 st. l. lemon juice
  • 1/3 tsp cinnamon

If you do not like raisins, then take 700 g of apples for the filling.

Cutting the packaging puff pastry and leave to defrost at room temperature. You can cover it with a film or a bag on top so that it does not wind. While we prepare the filling, the dough will just defrost.

We sort out the raisins and pour hot water from the kettle so that it steams a little.

I cook a very tasty filling for puffs with apples according to the same principle as for pancakes with apples and cinnamon. and for apple pie co sour cream from shortcrust pastry. For the filling, I buy green sweet and sour apples such as Golden, Granny Smith or Semerenko with dense, crispy flesh. Pieces of apples of these varieties retain their shape well during heat treatment and do not boil soft in mashed potatoes.
We clean the apples from the skin and seeds and cut into small cubes. Add 1 tbsp. l. lemon juice and stir.

Melt the butter in a frying pan and add the chopped apples. Sprinkle 3 tbsp on top. l. sugar and a bag (10 g) of vanilla sugar. Instead of vanilla sugar, you can add vanillin at the tip of a teaspoon.

Keep the pan on a fairly high heat, stirring the contents all the time. First, the sugar will begin to melt and the apples will start to juice, quite a lot of syrup will form. We stir the apples constantly until the liquid evaporates so that they are evenly saturated with syrup and do not burn. It is advisable to do this with a silicone spatula, gently turning the pieces of apples and trying not to injure them.
When there is almost no liquid left, and this is not very long, add cinnamon and raisins, after draining the water from it.

We stir the filling for some more time, until the liquid remains completely, and as a result we get this delicious stuffing for puffs:

Set the pan aside to cool. Now you can turn on the oven so that it heats up to 200-220 degrees.
By this time, the puff pastry has already defrosted. We will work with one sheet, and leave the second under the film for now.
Sprinkle the table lightly with flour and cut the sheet of dough into 4 parts.

We start making puffs. There are two options here. If you cook, as they say, on hastily, then the dough can not be rolled out at all, but done like this. First, put a full tablespoon of filling on a square of dough and connect the opposite corners. So that the corners do not stick out, you need to slightly moisten them with water.

Then connect the remaining two corners, try to glue them more securely. Pinch the corners of the puff with your fingers so that the filling does not leak out.

I took these two photos last time when I baked puffs just like that, in a quick way.
But if you have the time, try to make beautiful braided puffs, it's quite simple.

Many thrifty housewives in the freezer always have a package of ready-made puff pastry in case you need to “without bothering” to cook something for tea. One of the most delicious options baking from it - puffs with apples. Fragrant, delicate, made from the simplest ingredients, puffs do not linger on the table, especially if there are children in the house. Of course, it is better to cook from not margarine, but butter (especially for children), but, unfortunately, there is not always time to knead this rather laborious product.

Cooking time: 1 hour for defrosting the dough + 40 minutes (20 + 20) / Yield: 4-6 pieces

Ingredients

  • packaging of yeast-free puff pastry weighing 400-500 g
  • sweet and sour apples of medium size 3-4 pcs.
  • granulated sugar 3 tbsp. l.
  • vegetable oil 3 art. l. or butter 50 g
  • small egg 1 pc.
  • powdered sugar for sprinkling finished puffs 1 tbsp. l.

Cooking

    Puff pastry must be completely defrosted. To do this, you need to get it out of the freezer, take it out of the package and put it, for example, on a cutting board. Cover the dough with a towel so that it does not wind up, and leave it like that for 60 minutes.

    When the dough is ready to be molded, turn on the oven. For baking puffs, the temperature should be slightly higher than for regular baking - 220 degrees.

    While the oven is heating up, it's time to work on the filling. Wash the apples, peel, remove the core and cut the pulp into cubes about 1x1 cm in size.

    Heat oil or vegetable oil well in a frying pan. Put apples in a pan and add sugar (for more flavor, you can add 1 tsp of vanilla sugar).

    Increase the fire to medium and, constantly stirring with a spatula, fry the apples. In less than 10 minutes, the apples will become soft, and the released juice with sugar will turn into a thick syrup. The filling is ready.

    Line a baking sheet with parchment. It is more convenient to form puffs with apples directly on the baking sheet, so as not to transfer them later. Puff pastry is usually not rolled out, so baking is much more voluminous.

    If the puff pastry for puffs consists of one layer, then you need to cut it into rectangles of about 10-20 cm (you get about 4 puffs). If the dough is rolled out a little and the blanks are made smaller in size, the number of puffs increases. It's a matter of taste. In this case, we are guided by the principle: "I'm happy with the big pie," that is, we do more.

    Each piece is conditionally divided into two parts. In one part, make cuts along with a distance of 1 cm, not reaching the edge also by 1 cm.

    Put the filling on the uncut part, cover with the second part, press the edges (not the fold) quite hard with a fork. This will prevent the puffs from “opening up” during baking. Do the same with the rest of the blanks.

    Crack an egg into a small bowl, beat it slightly with a fork.

    Using a silicone brush or any other device, brush all the puffs well on top with an egg.

    Remove the baking sheet with the puffs into the already hot oven. After 20-25 minutes, when the puffs are browned enough, they can be taken out.

    Let the puffs with apples cool for about 10 minutes (otherwise, the filling can burn you badly) and serve them to the table, after sprinkling the puffs with powdered sugar.

The puffs are crumbly, moderately sweet and very satisfying. They can also be prepared with berries, but in this case, be sure to add about 1 tbsp to the filling. l. potato starch so that the juice from the berries does not flow out when baking on a baking sheet.
