How to bake pancakes with cottage cheese in the oven. Recipes: pancakes with cottage cheese, in the oven and chocolate

To my shame and great regret, I have never baked pancakes with cottage cheese with sour cream in the oven before.

This is very tasty dish. Delicate pancakes and sour cream, which after baking becomes like a soufflé, go together perfectly.

You can add raisins or fruits to the cottage cheese.

If you are a busy person, you can make preparations in the evening, and only bake in the morning. And a hearty hot breakfast will please the whole family. I don't mind finishing dinner with such pancakes.

Let's prepare the ingredients for making pancakes with cottage cheese in sour cream in the oven.

You can make your own pancake batter. I always make pancakes in this way: break eggs into a bowl, add salt and sugar, water and vegetable oil, mix thoroughly.

Pour the flour and mix so that there are no lumps.

Add milk, constantly stirring with a whisk, until the dough becomes homogeneous.

Bake pancakes, grease each with melted butter.

Add eggs and sugar to curd.

Mix.

Stuff pancakes with cottage cheese. Place in an oiled mold.

Mix sour cream with sugar. Put on top of pancakes.

Bake pancakes with cottage cheese in sour cream in the oven at a temperature of 200 degrees for 15-20 minutes.

Bon appetit.

This is such an incredible dish that is delicious on its own. But if you want to diversify your pancake diet a little, try baking them under a sour cream coat.

Pancakes baked in the oven stuffed with cottage cheese and cheese, under sour cream, are very tender!

This idea came to me one day when I wanted to somehow disguise my first bad experience of baking pancakes. The pancakes turned out delicious, but in some places they were torn and were not quite the right shape. no one will notice your little secrets from sour cream.

Of course, you can use any filling for pancakes, but “as they say” cottage cheese with sour cream is a classic of the genre. I was lucky to find a vegetarian smoked cheese, so I offer you a variant of such a savory filling.

By the way, pancakes with sweet curd filling are also very tasty.

Compound:

rectangular shape 25 x 30 cm

  • 10 pancakes
  • 400 g cottage cheese
  • 10 strips of vegetarian smoked suluguni cheese (about 85 g)
  • 200 g sour cream
  • dill and parsley (to taste)
  • black ground pepper(taste)

Pancakes baked in the oven with cottage cheese - recipe:

  1. Pre-bake pancakes in your favorite way. I used here.

    Pancakes for baking

  2. While the filling is being prepared, turn on the oven for heating (at 160-180 degrees). So, knead the cottage cheese with a fork or grind through a sieve.

  3. Add salt and ground black pepper to the curd to taste.
  4. Finely chop the dill and parsley with a knife.

  5. Now we stuff our pancakes. You can stuff in the traditional way - an envelope, or you can stuff it with a tube. Since I had a strip of smoked cheese running the length of the pancake, I used the second method. And by the way, it turns out very interesting when the pancake layer and the filling layer alternate.

    Speaking of cheese. I was lucky to find smoked, very tasty, moderately dense, but not rubbery. Here's what it looks like:

    Smoked cheese

  6. Spread the curd evenly over the entire pancake, leaving some room around the edges for the fold. Sprinkle with chopped herbs and put one strip of smoked cheese closer to the edge.

    Stuffing pancakes

  7. Roll the pancake into a tube.

    We twist

  8. Lay pancakes close together on a baking sheet.

    Put into a baking dish

  9. Now you need to cover our pancakes with a delicate white “fur coat”. Spread sour cream evenly on top and sides.

    Lubricate pancakes with sour cream

  10. Bake pancakes in the oven for about 30 minutes so that most of the sour cream is absorbed and a small part remains on the surface.

    Bake in the oven

  11. Serve the baked pancakes warm.

    Due to sour cream, pancakes stick together pretty well in the oven. Therefore, they can be served in two ways - either simply in separate pancake tubes, or by cutting the pancake casserole into arbitrary rectangles.

    My smoked cheese melted quite a bit and generally retained its shape. Therefore, it was more convenient for my husband and I to eat a whole tube, without even using cutlery.

    Eat to your health!

9. Also add the previously melted butter here.

10. Heat up the pan. If you are using, for example, a cast-iron skillet, then grease it with a small amount before baking. vegetable oil, repeat from the beginning if the pancakes start to stick. If using a Teflon pan, this step can be skipped.

Pancakes with cottage cheese in the oven

Most often I cook pancakes for the weekend or sometimes for dinner. I make them with all sorts of fillings and different shapes. Sometimes you just want openwork pancakes, to which homemade marmalade is attached. And sometimes the soul and stomach require something special. So I came across a recipe for pancakes with cottage cheese in the oven. These are unusual pancakes, showing a creamy curd filling in a section. I want to remind you that the history of pancakes goes back centuries, and the pancake itself has not changed at all! Pleases with its ruddy sides and creamy aroma!

According to this recipe, thin, but strong and elastic pancakes are obtained. They don’t have those bubble holes, but you can easily wrap the stuffing in them to your taste. What do we use!

Pancake dough ingredients

  • 1 egg and 1 protein;
  • 1 glass of milk;
  • 1 glass of water;
  • 2 tsp Sahara;
  • 3 art. l. sunflower oil;
  • 1.5 cups flour; a pinch of salt.

For the filling for cottage cheese pancakes, we need:
300 g of fatty cottage cheese;
3 tsp Sahara;
1 yolk;
1 tsp natural vanilla sugar.

How to cook pancakes with cottage cheese in the oven

In the beginning, we will prepare the filling of cottage cheese for pancakes. In a convenient bowl, beat the cottage cheese with the yolk and sugar with an immersion blender until the grains completely disappear. The mass should turn out to be thick, so it will be well distributed over the pancake, but will not leak out during baking. If the mass is very dense, then a spoonful of sour cream or Greek yogurt will fix everything. You can take cottage cheese and low-fat, but the main thing is that it is not sour. The filling for cottage cheese pancakes is ready!

Let's start making pancake dough. I will say right away that I do not sift flour, but if you wish, you can. We mix all the ingredients with a whisk (I have a nozzle on a blender). In what order to do it - it does not matter. It is important that there are no lumps. Therefore, it is better to pour water at the very end. We fry pancakes as usual. I fry in one pan, but you can fry the pancake in one pan and turn it over to another. If you are afraid that the pancake will stick to the pan, then grease it with a little butter, just a little bit.

On the ready-cooled pancakes, spread the curd mass with a spoon and carefully, so as not to tear the pancake, smear it. The curd filling should completely cover the pancake. I spread with a knife, but with the blunt side. So even more convenient than a spoon.
Photo3
We twist the resulting pancake with a roll, put it in a mold covered with parchment paper. When all the pancakes are turned into rolls, we send the form to the oven preheated to 180 degrees for 15 minutes. I get 14 pancakes in a pan with a diameter of 21 cm. But this is approximately, because 1-2 can be eaten by a daughter or husband!

Pancakes with cottage cheese cooked in the oven can be served with any jam, sour cream, chocolate or caramel topping. You can also cut them diagonally into pieces and decorate the dish with strawberries or raspberries.

It should be noted that the curd for the filling should be non-acidic, and the filling should be thick. Do not overcook pancakes with cottage cheese in the oven, otherwise the filling will turn out in a piece of cardboard. You can cover the form with foil or paper.

Pancakes with cottage cheese in the oven

I can’t say that the pancakes are irresistible in the photo, I didn’t even want to post the recipe. But the child persuaded, because the pancakes are very tasty, and goodies should be shared!

Pancakes according to this recipe are very tender, more like some kind of cake. So, if your kids are rioting on the ship at the sight of cottage cheese, I advise you to treat them to these pancakes.

Baked pancakes with cottage cheese, sour cream and honey

Preparation time: Preparation 1 hour; bake 30 minutes Servings: 8-10

Sweet pancakes with cottage cheese filling are always delicious, and even if they are oven-baked pancakes with cottage cheese, sprinkled with amber honey and snow-white sour cream. Imagine how elegant and delicious it is! Both kids and adults will love it!

But imagining it is good, but trying is even better. Therefore, let's celebrate Maslenitsa with a simple but effective recipe for pancakes in the oven with cottage cheese, raisins and dried apricots!

This dish is prepared simply and quickly - if, for example, miniature pancakes. which we baked in the form, you need to fold for a long time, then here you just need to roll the whole pancakes into tubes!

For pancakes:

  • 3 eggs;
  • 3 tablespoons of sugar;
  • ¼ teaspoon salt;
  • 3 glasses of milk;
  • 2 cups of flour;
  • 1 teaspoon of soda;
  • 1 tablespoon lemon juice;
  • 2 tablespoons sunflower oil (refined).

For curd filling:

  • 400 g of cottage cheese;
  • 2 tablespoons of sugar;
  • 1 egg;
  • 1/6 teaspoon vanillin or a bag of vanilla sugar.

For watering:

  • 5 tablespoons of honey;
  • 150 ml sour cream.

How to bake pancakes with cottage cheese in the oven:

I baked my favorite pancakes in milk: they are thin, tasty, and easily removed from the pan. Beating eggs with salt and sugar until fluffy (a couple of minutes with a mixer), alternately sift part of the flour, then, after mixing, pour in part of a little warm milk. We add soda to the last portion of flour, and pour lemon juice into the dough - from this combination, pancakes are obtained in a hole. If you want without holes - do not put soda and lemon.

Lumps remain in the dough when stirring with a spoon - take a mixer and beat for another half a minute. Now that's great! Pour in a couple of tablespoons of sunflower oil and mix well: now the pancakes will not stick.

Before the first pancake, we also grease a frying pan (dry and clean!) with a thin layer of vegetable oil, heat it well over medium-high heat and pour the dough with a ladle.

Bake until browned on the bottom; then turn over and bake on the second side; remove with a thin spatula on a dish and grease with oil to make it more tender (if the edges are crispy and brittle, then all the more grease the hot pancakes with oil, they will stand, soften, and it will be easier to roll).

While the pancakes are cooling down a little, prepare the curd filling. We take the cottage cheese not dry, without lumps, but not too wet. For greater tenderness, you can rub it through a colander, as for the Lviv cheesecake. or beat in a blender. Add sugar, egg, vanilla and grind.

Pour chopped dried fruits: raisins, pieces of dried apricots. To make dried fruits soft, you can pre-fill them with warm boiled water (but not boiling water to save vitamins). Let stand for 10 minutes, then drain the water, squeeze the fruit and add to the filling.

Spread pancakes with cottage cheese filling - approximately on 2/3 of the area of \u200b\u200bthe pancake, and turn into a tube, starting from the edge with the filling.

We spread the pipes in a mold, greased with oil.

Pour sour cream and honey - figuratively, in the form of a lattice! It is more convenient to do this if you cut off a small corner from the package with sour cream, and the higher its fat content and the thicker the sour cream, the clearer the pattern will turn out. But we need liquid honey to make it more convenient to draw with it - if it is sugared, then heat it up slightly, stirring, in a water bath (put a plate of honey in a saucepan with warm water).

Since there is an opinion that strong heating is not useful for honey, you can bake pancakes under sour cream, and then, after taking it out of the oven, pour over honey.

We put the form with beauty for 25-30 minutes in the oven, bake at 180C.

Serve warm! You can additionally pour sour cream and honey, or jam.

There are also variations on the theme of pancakes with cottage cheese in the oven - you can make a very tasty Austrian casserole from them, the filling there is also cottage cheese, but the sprinkling of sugar and cinnamon is very fragrant. Come to Cooking with a twinkle - soon I will share Austrian pancakes!

The most important thing is to make pancakes. Today I will cook pancakes in milk, I take 1 liter of milk, since everyone loves pancakes, and half a liter does not turn out so many pancakes. Some of them I will stuff with cottage cheese and bake in the oven, and some I will serve with honey and jam.

This recipe can be viewed in 1.54 minutes in the photo video at the end of the article.

Pancakes with cottage cheese in the oven - a recipe with sour cream

  • 800 ml. milk (I have rustic)
  • 200 ml. boiled water
  • 5- 8 pcs. eggs
  • 100 - 150 ml. vegetable oil
  • 2 cups of flour not a mountain (a glass of 250 grams)
  • 5 - 6 tbsp. spoons of sugar
  • 0.5 teaspoon salt
  • vanilla sugar
  • 500 grams of cottage cheese
  • 1-2 pcs. eggs
  • 2-3 tbsp. spoons of sugar

Ingredients for sour cream filling:

  • 400 grams of sour cream
  • 2-3 tbsp. spoons of sugar
  • 1 sachet of vanilla sugar

Let's get started with the pancake recipe. To do this, you need to prepare the ingredients. They can be bought in the market or in the store.

Pancakes in sour cream in the oven - recipe with photo

If you use store-bought milk, then you do not need to dilute it with water. I have fat village milk, I dilute it with boiled warm water, not hot.

I have 5 eggs in the photo, but if you have small ones, it is better to use 8 pieces so that the pancakes do not tear and are well removed from the pan.

I forgot to put sugar in the frame, I apologize. Add sugar to taste, someone likes the dough sweeter, but someone does not. Especially if you serve pancakes with cottage cheese in addition to honey and jam, then the dough can be made not so sweet. I add 5-6 tablespoons of sugar per liter, not a mountain.

Crack eggs into a bowl, add sugar and mix. I use a whisk for this purpose. But to whom it is convenient, it may be convenient for you to use a mixer.

Add salt, but without fanaticism, half a teaspoon is enough. Vanilla sugar. I like to use vanilla sugar for the dough, not vanilla.

Add milk, vegetable oil and flour. We add the flour in portions and mix with a whisk, or a mixer, if it is convenient for you to stir the dough for pancakes that way.

If your pancake batter has lumps, don't worry, let it sit for 30 to 60 minutes at room temperature, then stir again to loosen any lumps.

I have so much dough turned out, there are a few lumps. But a prerequisite delicious pancakes, is to leave the dough at room temperature. Adjust the time yourself, I usually leave the dough for an hour.

Now the main task is to fry pancakes. In this matter, we need time and patience. We fry pancakes in a hot frying pan on both sides.

Before the first pancake, I grease the pan with vegetable oil, then, when the pan is hot, you can not do this.

If it seems to you that there is not enough vegetable oil in the dough, you can add more. We use refined oil.

When cooking pancakes, I don’t fry them much, they turn out to be light in me.

Well, I fried pancakes, such a stack, I didn’t count how many pieces. If you want to know more pancake recipes, then I offer you 11 pancake recipes for Maslenitsa, you can choose any recipe you like, especially since they are all with step-by-step cooking photos.

All recipes are tested by us personally, everything is in a selection of our delicious recipes that we ourselves use and cook using these recipes.

Let's start stuffing pancakes with cottage cheese. I will cook pancakes in sour cream, baked in the oven.

I prepared cottage cheese, an egg, sour cream, and, in fact, the pancakes themselves. Also, there is no salt in the frame, but I definitely add a little salt to the cottage cheese.

I mix cottage cheese in a bowl with sugar, an egg, add literally 1/3 - 1/4 teaspoon of salt. I mix everything well. I recommend adding the amount of sugar to taste. As they say, everyone has different tastes.

Thus, we prepare the filling for pancakes with cottage cheese. Next, we stuff or stuff the pancakes (whoever is used to calling this process).

Put the filling on the edge of the pancake and fold the pancakes into an envelope.

I put the finished pancakes in a baking dish. I spread it in one layer, it's more convenient for me.

I got 16 pancakes for baking. But 500 grams of cottage cheese was enough to fill 26 pancakes, of which I will bake 16 in sour cream in the oven.

The rest I fried in butter on both sides in a pan and served with sour cream.

Here is my glass baking dish, you can use any baking dish.

Before spreading pancakes, the form must be greased with butter or cover its bottom with sour cream, and then spread pancakes with cottage cheese.

I put pancakes in a form in one layer, but if your form is smaller or you want to bake more pancakes, then you can use two or more layers. Now I'm going to start making the sour cream filling. I took 15% sour cream, you can buy 20% or fill pancakes with rustic sour cream. I just love pancakes, and fatty sour cream can add extra calories to me.

I mix sour cream with sugar and add vanilla sugar. Again, I repeat, everyone has their own tastes, be guided by your preferences. After adding sugar, mix sour cream and taste, if everything suits you, then pour pancakes.

Meanwhile, preheat the oven to 200 degrees. We distribute the sour cream filling over the entire surface of the pancakes, these are pancakes baked in sour cream in the oven, so the sour cream should completely cover the entire surface of the pancakes.

400 ml. sour cream was enough for me for these purposes. I also want to note that pancakes lay out in a form denser to each other.

I put the pancakes in the oven to stew for 20 minutes. They boil there in sour cream. After 20 minutes, I take the mold out of the oven. I leave to cool down a bit. This is what it looks like.

It is better to use pancakes in sour cream in a warm form. I can't tell you how tender, delicious, fragrant they are. I separate the pancakes with a spatula and put them in portions on a plate.

I love when everything is neat, and each pancake can be separated from each other. I do not advise watering them with sour cream, but you can use honey, condensed milk, jam. I serve with viburnum jam (grated viburnum with sugar, only pitted).

If you have not cooked pancakes with cottage cheese in sour cream in the oven, then the recipe with a photo will help you. Be sure that both you and your loved ones will like these pancakes. Pancakes are very juicy, tender, with creamy notes, in a word, yummy.

There can be many cooking options, you can make miniature pancakes with cottage cheese. This will turn out if you cut the pancake into 4 parts, and fill each with cottage cheese.

You can add raisins, dried fruits, poppy seeds to cottage cheese, it will also turn out delicious. You can roll pancakes into tubes and bake in sour cream.

Cook with love and enjoy. I am sure that you will like this dish, and you will succeed. Bon appetit.

I love cottage cheese pancakes!
By the way, I have a funny case from my life connected with pancakes.
My wedding was in February, the 4th. We did it at home, in the apartment. And the cooks came and prepared the food. So the night before the wedding, they kneaded a bucket of pancake dough to make pancakes. And they went home. And I, the future bride, instead of resting, preparing for the wedding, had to overcook thin pancakes from all this amount of dough. And so I didn’t fry a bunch of thin pancakes for the pancakes until I went to bed. And the next day, in the morning, the cooks had already come and were making a casserole with cottage cheese for holiday table.
I had such a funny case related to pancakes. But nevertheless, I did not stop loving them, especially pancakes with cottage cheese, which I also love very much.
Thank you Alena for delicious recipe pancakes with cottage cheese. Everything you do is amazing!

Olya, well, you got it! Although I love to bake pancakes, but on the eve of the wedding, I would probably be indignant))

Everything according to your desire. I once tried such baked pancakes in a restaurant and now I only cook them in this way. They are softer and more aromatic.
